Poached Eggs w/ Quinoa & Spinach
(1 out of 3) – Didn’t like it.
Review: In theory this recipe sounded delicious, but it just wasn’t. The flavors were really really bland, the poached egg and spinach made it really watery. And the strange consistency of the cucumbers and carrots with the hot eggs was just kind of gross to me. I wouldn’t really know where to begin to improve this other than just doing a totally different recipe. I prob won’t try this again.
Helpful Tip: If you do make this, do what you can to keep the excess liquid from the spinach and poached eggs low. Maybe put the spinach onto a paper towel and soak up as much as you can.
I have never poached eggs before, so I was excited to give it a try! I found these cute silicon poached egg holders on Amazon. They worked perfectly and their colors are cute – which is obviously what’s most important :).
No you’re not blind, the eggs are on the bottom under all this stuff.
